These tracks hold the blades securely and at the proper angle. With a blade in each track, it is a simply a matter of holding the handle and rubbing the blades against an abrasive surface. We recommend abrasive paper in a progression of grits from 120 to 400 grit for final polishing. It couldnt be easier, and the proof is performance. More than one blade? In the case of 8 inch knives, just put two 8 inch blades on one, one the other. Three 12 inch blades? No problem!
